AVON, Colorado – Avon restaurant and wine bar vin48 is hosting an organic wine tasting today. Matthew Pauls, of the Natural Wine Co., will lead the tasting from 5 to 6:30 p.m. in the restaurant’s wine bar. He will pour five of his favorite organic, sustainable and biodynamic wines from the Natural Wine Co. portfolio

A natural wine, at its most basic level, is grown organically, harvested by hand and then made with minimal intervention in the cellar. Natural wines deserve to be featured because they convey a sense of place. Focusing on natural wine provides a way for the Natural Wine Co. to stand apart from the average wine distributor and its typical selection. Grape vines farmed naturally produce wines that retain more of their natural acidity and are lower in alcohol. They produce more concentrated wine because the vines have lower natural yields.

“We are a young, dynamic wholesaler with a stellar portfolio of wines from around the globe,” Pauls said. “In addition to carrying great domestic producers like Copain, Wind Gap and Larkmead, we are also proud to represent the portfolios of Louis/Dressner, Indie Wineries and Polaner Selections. In conjunction with these importers, we have chosen to work with vignerons who have intervened minimally both in the vineyard and in the cellar and have priced their wines reasonably. At the very least, our wines are farmed sustainably, but many of our producers are certified organic or biodynamic.”

Every Wednesday, the restaurant will serve wines from visiting winemakers, importers and industry insiders, paired with chef-owner Charles Hays’ cuisine. All of the wines served are available for purchase at discounted prices from Beaver Liquors in Avon. For more information, call 970-748-9463.
