The Milk Breakfast restaurant opens in Eagle

Let the Saturday morning foot traffic in the entryway of The Milk Breakfast stand as proof: Eagle residents are excited to have a new morning eatery in town.
Staff were busy hauling tempting, decadent dishes from the kitchen (and empty ones to the dishwasher) while weaving through a line where curious customers and satisfied face-stuffers briefly met for smiles and recommends as a friendly host ushered groups with grace.
It was a welcome scene in the former Ti Amo location, with new smells and a squeaky new appearance to pair. Manager Jhon Rincon also welcomed the sight, saying that business has been “going good.”
“We have many local people and they really like it,” he said.

Eagle’s newest breakfast joint holds true to the things early eaters crave, with some additional creative touches on the house. Leading with a section of shareables, the menu offers items that speak to both the sweet and the savory such as the Signature Toast Trio, which offers three sourdough toasts respectively topped with berry compote, smoked salmon and avocado. From there, the menu dives into classics such as biscuits and gravy, pancakes and a trio of Benedict selections while also offering specialties such as Turkish eggs and a croque madame. The Mexican Sunrise section offers a noteworthy number of south-of-the-border favorites such as huevos rancheros, chilaquiles and enfrijoladas.

Sandwich and salad options round off the lunch menu, and there’s a kids menu for those under 12. There is also a fresh juice bar, offering morning concoctions such as the Morning Meditation with carrot and orange juice, and the Purple Day with beet and orange juice.
