This little piggy got roasted
Seasons past saw the restaurant/bar hosting a pig roast on Vail’s opening day, but somewhere along the line the tradition got left behind. In honor of their 10th anniversary, they’re resurrecting the pig roast. It begins today at 4:20 p.m.
They picked out two whole, local pigs from the farm in Gypsum, and the roasting festivities began Thursday amidst much brouhaha at manager Mike D’s house. (He refuses to give up his last name, insisting nobody would know who he was.)
In addition to pig – and lots of it – they’ll also have roasted chickens and all the traditional barbecue trimmings, such as coleslaw, beans, beer, beer and more beer. For those working in Vail, a special card may be procured for future deals on food and drink at Garfinkel’s.
“We call them our red-headed stepchild cards,” said Mike D. “We’ve got a few of them around here.”
