Breakfast: Avon Bakery and Deli, Avon

The meal: “The bacon, tomato and ham on everything bagel … the everything bagel has every different topping on it, all the different seeds, so it gives it that tangy taste to it.”

Lunch: Paddy’s Sports Bar and Grill, Eagle-Vail

The meal: “It’s a three-layer sandwich with just about everything on it: Lettuce, tomato, ham, bacon.”

Dinner: Ti Amo Ristorante, Eagle Vail

The Longevity Project is an annual campaign to help educate readers about what it takes to live a long, fulfilling life in our valley. This year Kevin shares his story of hope and celebration of life with his presentation Cracked, Not Broken as we explore the critical and relevant topic of mental health.

The meal: “It was kind of a fettucini alfredo but it had chicken, broccoli and sun-dried tomatoes in it. One thing about the sauce is it’s super rich, so no matter how hungry you are, you can never finish a meal.”

Breakfast: Route 6 Cafe, Eagle-Vail

The meal: “The eggs benedict because you can’t get poached eggs just anywhere and it’s near where I work.”

Lunch: Avon Bakery and Deli, Avon

The meal: “The turkey club because it’s the best club in town.”

Dinner: Sato Sushi, Edwards

The meal: “Spicy tuna. It’s savory and delicious.”

Breakfast: Westside Cafe and Market, West Vail

The meal: “Blueberry pancakes. Filling, not too fatty, and a good vehicle for syrup.”

Lunch: Gohan Ya, West Vail

The meal: “The salmon teriyaki bowl. Tasty. A lot of food and I get to eat with chopsticks.”

Dinner: Terra Bistro, Vail

The meal: “Their ahi tuna. Great fish. Nicely presented with interesting accompaniments and usually someone else is paying.”
