Toscanini hosts wine dinner Monday

Special to the Daily Toscanini in Beaver Creek is hosting a wine dinner featuring vintages from the Cabutto farm, center, in Barolo, Italy. Also called "Tenuta La Volta," the farm is situated around a castle. Host Paolo Canclini will be on hand to answer questions about the farm and the wine it produces.

BEAVER CREEK – Toscanini is taking the guess work out of pairing wine with food during its Piemonte Wine Dinner Monday at 7 p.m.Not only will the restaurant pair each of the four courses with a different wine, host Paolo Canclini will explain why the wine’s flavor profiles complement the dish.”The food is prepared around the flavors you get from the wine,” manager Collin Baugh said. “We only do one seating, opposed to staggered seatings, that way the host will have an opportunity to discuss and teach patrons about the specific wines and grape varietals.”Canclini will also talk about the Cabutto farm in Barolo, Italy, where the wine is produced. The farm, also called “Tenuta La Volta” because its situated around a castle, was founded in 1920 and prides itself on producing complex wines created to mature, Baugh said.Toscanini will host three or four more wine dinners through out the winter with one taking place on New Year’s Eve.
