Truffle time at Spago in Bachelor Gulch

BEAVER CREEK, Colorado ” Spago Executive Chef Mark Ferguson holds 1.1 pound Alba white truffle harvested in Piedmonte, Italy on Thanksgiving weekend. The cost of the truffle was approximately $4,000 and would have retailed for three to four times that in a flourishing economy, according to Parool Shah, director of public relations for the Ritz-Carlton, Bachelor Gulch. Starting this weekend the restaurant will offer a three-course truffle tasting menu.
Sample offerings include a traditional pizza with fresh mozzarella, aged fontina, 7-year-old Parmesan Reggiano and a gram of white truffle; and risotto with Italian “luigi guffanti” butter, walnut leaf-wrapped pecorino and a gram of white truffle. Call 970-343-1555 for more information.
