Vail Cascade partners with Elizabeth Blau on new restaurant

VAIL, Colorado Vail Cascade Resort & Spa, managed by Destination Hotels & Resorts, recently announced a partnership with renowned restaurant planning and development expert Elizabeth Blau and her team at Blau & Associates. Blau is assisting the Vail Cascade with the concept and design of its new restaurant, Atwater on Gore Creek. The restaurant will replace the resorts chophouse, Chaps, offering guests a unique new option in on-property dining. Atwater on Gore Creek is scheduled to open in time for the December 2008 holiday season.Blau & Associates is a strategic restaurant planning and development company that specializes in providing clients with fresh, creative and sound business advice needed to create exceptional food and beverage concepts from start to finish. Blaus client list includes hotels, casinos, resorts and independent restaurants, such as The Ritz-Carlton, Palm Beach (Palm Beach, Fla.), Wynn Las Vegas Resort & Country Club (Las Vegas), and Le Cirque (New York).Blau recently opened three additional restaurants in the Destination collection including VOICE at Hotel ICON in Houston, which was named one of the best new restaurants in 2008 by Esquire magazine. The Blau team also launched Luminaria at Inn and Spa at Loretto in Santa Fe and will debut a variety of restaurants and food and beverage outlets at Terranea Resort in Palos Verdes, Calif. in 2009. We selected to work with Blau & Associates because of their proven track record in creating extraordinary dining experiences for some of the most well-known hospitality companies in the industry, said Mark Hickey, senior vice president of U.S. hospitality operations for Destination Hotels & Resorts. The Blau team has worked with us on several projects in the last year and all have been loved by their guests, communities, the media and critics. Were excited for another successful opening with Atwater.The design for Atwater on Gore Creek is in preliminary planning stages. The new restaurant name was derived from the Cascades idyllic location alongside Gore Creek. Atwater on Gore Creek will include an enclosed patio, in addition to the main dining room, with expansive windows offering views of Vail Mountain and Gore Creek.The 292-room Vail Cascade Resort & Spa provides slope-side access to the largest single-mountain ski resort in North America. The mountainside resort offers 27 suites, more than 80 spacious condominiums and private homes to choose from. Nestled at the base of Vail Mountain, Vail Cascade, which is completing a $30 million renovation, is Vails only ski-in/ski-out AAA Four Diamond resort. The property was also recently listed as one of the top world-class mountain resorts in Conde Nast Traveler.
