Vail chef Kelly Liken wins episode of ‘Knife Fight’

Chef Kelly Liken of Vail's Restaurant Kelly Liken took home the win in Tuesday night’s Esquire Network “Knife Fight” season two of the original hit series. The “Battle Colorado” face-off had Liken head-to-head with fellow Colorado chef Steve Redzikowski, of Oak at Fourteenth.

Chef Kelly Liken of Restaurant Kelly Liken, located in Vail, took home the win in Tuesday night’s Esquire Network “Knife Fight” season two of the original hit series. The “Battle Colorado” face-off had Liken head-to-head with fellow Colorado chef Steve Redzikowski, of Oak at Fourteenth.

The two dishes that earned Liken the win and bragging rights included a beef heart tartare served with dandelion greens and a Southeast Asian-style shrimp broth that featured all three ingredients including raw and thinly sliced beef heart, live spot prawns layered at the bottom of the bowl, mixed in with lotus root, crimini mushrooms, and dandelion greens. “I was proud to represent Colorado,” Liken said. “Steve brought a great game and it was a lot of fun to cook in such a exciting setting.”
