Vail chef to sell snacks, drink mixes

VAIL, Colorado – Vail chef Kelly Liken is starting her own gourmet snack line. The line will include some of her favorite snacks, as well as her award-winning handcrafted cocktails, all based on the same principles she abides by at Restaurant Kelly Liken in Vail and Rick and Kelly’s American Bistro in Edwards – the use of fresh, seasonal, and local ingredients.

Kelly works with growers to ensure that she has the finest locally grown ingredients for use in her new snack line.

“I have always experimented and made my own foods at home-from pickles to spiced nuts,” Liken said. “Many of my dishes or bar bites have started out in my home kitchen before taking them to my customers at the restaurant or bistro.”

The Kelly Liken Gourmet Specialty Snack line will be available by special order at Among the items in the line are Liken’s favorite soups, which come in a 16-ounce jar and will include about two servings. Soups will retail for $15 each. The soups will change depending on what is in season, and will include:

• Spiced buttermilk squash.

• Vanilla-scented golden beet.

• Truffled-roasted cauliflower.

• Apple fennel or brandied wild mushroom puree

Kelly’s Homemade Kettle Chips come in a 4-ounce bag and retail for $5 each. They come in flavors, such as:

• Dill pickle.

• Buttermilk and herb.

• Cheddar and habanero.

Kelly Liken’s Gourmet Dips feature fresh local herbs, including many that are grown in her backyard garden. Each dip will be available in an 8-ounce container. They will retail for $6 and will include:

• Colorado spinach dip.

• Creamy three onion dip.

• Garlicky black bean dip.

• Roasted red pepper hummus.

The cocktail mixes are based on the signature artisanal drinks offered at the bar at Restaurant Kelly Liken. Each cocktail mix includes one jar that will make four cocktails. They each come with a recipe for step-by-step instructions and will retail for $10 each. The line will include:

• Chai-ti-ni.

• Roasted red pepper bloody mary.

• Pumpkin pie cocktail.

• Riding out the (snow) storm.

“These are all great for that foodie in the family who enjoys a rare and special treat every holiday,” Liken said.
