Vail Daily letter: Mushroom festival kudos

This year’s third annual Eagle Mushroom Festival attracted a great number of people interested in hunting mushrooms from Vail to Gypsum. With all the rain that we have been getting in August, the mushrooms were plentiful. I would like to thank everyone for turning out to this fun event.

Special thanks to the genuine hometown hospitality of Tom and Nate at Paradigms Restaurant. Your mushroom risotto, with the tempura battered sliced puffball mushroom, was one of the best I have ever tasted.

Great thanks to Chef Ryan Murray, of Red Canyon Cafe, for his superb cooking class on how to clean, preserve and cook some of our favorite mushrooms. The garden fresh green beans and king boletus mushroom dish you prepared was an example of how fresh ingredients create the memorable dishes. The generosity of Craig Colby at Broadway Liquors providing the white and red wines we enjoyed at the mushroom cook-off on Saturday night was also greatly appreciated and a highlight of the Saturday foray. Thanks are also extended to town of Eagle for its support of the event. The contributions of everyone, including the enthusiastic participants, make this festival so enjoyable for all.
