Vail: La Bottega celebrates truffles

“It’s not necessarily the truffles,” said Stephen Virion, La Bottega Vail’s owner and executive chef. “For me, it’s the inspiration and possibilities they provide for exceptional cuisine.”

The restaurant will have a special truffle-centric menu New Year’s Eve, including rare black Italian truffles, will be featured in “Tagliolini with Lobster Ragu and Black Italian Truffles.”

Other creations run from the festive – “Wagyu (Kobe Beef) Cheese Steak” with foie gras mousse, imported bufala mozzarella and black truffles – to seductive – “Duck Eggs Benedecadence,” on grilled ciabatta with sauteed foie gras, black truffle hollandaise, duck bacon and white truffle.



“Every year, I try to build flavors and textures that please our guests and give them something to tell their friends about, whether they like delicate, gourmet combinations or something that rewards them for a vigorous day on the mountain with a more substantial meal. Either way, it’s a lot fun,” Virion said.
