Participate in The Longevity Project

The Longevity Project is an annual campaign to help educate readers about what it takes to live a long, fulfilling life in our valley. This year Kevin shares his story of hope and celebration of life with his presentation Cracked, Not Broken as we explore the critical and relevant topic of mental health.

What’s new or exciting at your place? We are the first business to offer this service (other than pizza) in the Vail Valley. We do not take this for granted, though – each of our dishes is made with special care as we take great pride in our cooking.

What strategy do you use to differentiate your business from your competition? Quality ingredients, freshly made items, we won’t serve it unless we find it highly appetizing!

What philosophy do you follow in dealing with your customers? What can your customers expect from you? We give friendly customer service, and customers can expect delicious food, served with a smile in the wee hours of the night.

Tell us a little about your background, education and experience: Virginia comes from Argentina, where she has been self-taught to cook Argentinian classics such as empanadas and milanesas. Taking what she learned from generations in her family and adding her own style, you will not be disappointed in these dishes! Shannon has worked in various fine dining restaurants over the years as well as having grown up in a family restaurant. She uses her Italian background as inspiration for many of her dishes.

What is the most humorous thing that has happened at your business since you opened? Definitely our first night! We got our first call and completely panicked. We couldn’t remember our menu, ran around the kitchen in a panic and when we couldn’t find our change bag for the delivery we thought we’d been robbed! Luckily we quickly gathered ourselves and now handle our orders with calm professionalism!
