Vail Valley dining: Spago chef cooks at 50 Spruce

VAIL VALLEY, Colorado – The kitchen at 50 Spruce Lane, a private residence in Lake Creek, is cooking up one a unique culinary class series in the Vail Valley this summer.

The site for a new cooking class series isn’t your ordinary family kitchen – the artsy, spacious room is a living, dining and cooking space, designed with Mexican Cantera walls and hand-blown glass light fixtures that make the room feel intimate and welcoming.

Kelly and Jim Brinkerhoff’s home at 50 Spruce Lane is located just after the entrance to Lake Creek Road in Edwards but the sound of Highway 6 is muffled by the surrounding trees and nearby Lake Creek.

The large kitchen island is inspired by the valley’s best chefs. With ample counter top work space, two prep sinks, a six-burner Wolf range and a wood burning oven, this is an aspiring chef’s dream come true.

“We wanted to provide a different culinary experience in the Vail area,” Kelly Brinkerhoff said. “Getting to know some of our local chefs and learning a few of their tricks while dining on great food in an intimate setting has turned out to be a terrific way to enjoy the summer, meet new friends, and support some of our most important local nonprofit organizations.”

The Vail Symposium provides the institutional support for the cooking series. The Millennium Society, which reaches a younger, yet still philanthropic demographic, supports local organizations such as The Youth Foundation and Habitat for Humanity. The Minturn Community Fund strives to connect people who care with causes and events that enrich the quality of life in the Minturn Area.

“We’re very excited for the third class this Monday with Executive Chef Mark Ferguson and Chef de Cuisine Steve Maline of Spago at The Ritz Carlton, Bachelor Gulch, who will focus on serving an elegant four-course meal with wine pairings by The Ritz Carlton’s master sommelier, Sean Razee,” said Kelly Brinkerhoff. “And it’s an easy, fun way to get to know our local chefs and support wonderful local charities.”
