Vail Valley: Kirby Cosmo’s opens Edwards store Friday
VAIL VALLEY, Colorado – The economic slump has taken its toll, but it’s also provided opportunity for entrepreneurs. Mark Tamberino thinks he sees a new opportunity.
Tamberino is the owner of Kirby Cosmo’s barbecue restaurant in Minturn. That restaurant has earned a loyal following among locals, and brings visitors to town, too. With the Minturn restaurant doing well, Tamberino decided the time was ripe to expand.
So after several weeks of work and several days of meat-smoking, a new Kirby Cosmo’s is set to open Friday in Edwards, next door to the Marble Slab Creamery ice cream store.
“It just felt like the right time to get in on the ground level here,” Tamberino said from the new restaurant. “Sure it’s a tough economy, but you won’t find better deals than you will right now.”
With Edwards firmly established as a community, Tamberino said he believes the new restaurant will become established, too, by the time the economy turns around. And people familiar with the Minturn location will likely be right at home in the new restaurant.
The menu will be a little different, but the new Kirby Cosmo’s will smoke its meat on-site, has a full bar, and plans to host live music on Thursday nights.
And Tamberino said he believes people in Edwards will treat the restaurant as well as Minturn residents have.
“We think we’ll get that support,” he said. “We’ve got a good location and we’re in a good situation with our pricing.”
And there’s all that smoked meat, too.
