Vail Valley restaurants: 8100 makes Esquire

VAIL, Colorado –Though its not on Vail Valley shelves quite yet, Esquire magazine’s November issue lists 8100 Mountainside Bar and Grill in the Park Hyatt Beaver Creek on its 15 restaurants ‘not to miss’ list. The list includes restaurant runners-up to its compilation of the nation’s 20 best new restaurants. The feature is an annual one.

“We thought it was impossible: a true Rocky Mountain grill with a great wine list,” the short entry reads.

Pascal Coudouy, the executive chef and food and beverage director for the Park Hyatt, was very surprised when he heard the news, he said.

“It’s unbelievable, he said. “It was a great surprise. We all are very happy. It’s a team effort.”

Critic John Mariani highlighted a dish that is indeed worth talking up: marinated elk loin with a compote of sage, blackberry and roasted shallots.

“It’s one of our most popular dishes,” Coudouy said.

Mariani visited the restaurant in January, Coudouy said.

“We talked about the concept of 8100 and he liked it,” Coudouy said. “He did have dinner and wine pairings and we talked a bit after each course. He was happy when he left, but I didn’t expect anything else.”

Another Colorado restaurant – Ajax Tavern in Aspen – was also listed as a runner up.
