Vail Valley restaurants go all out with specialty pairing dinners, culinary pop-ups and theme nights
From wine pairings to tropical menus, dinnertime just got a little more interesting in the Vail Valley

Vail Valley chefs are hosting unique dining events throughout the summer. Take advantage of educational opportunities, such as wine maker dinners, craft cocktail-making classes, specialty tastings curated by a sommelier or pop-up dinners.
The Remedy at Four Seasons Vail
Highland Harvest Farm-to-Table Dinner
- June 25 from 5-7 p.m.
- Chef de cuisine Pankaj Bisht has carefully crafted a menu showcasing the finest local produce and seasonal meats. Enjoy a three-course prix-fixe, family-style dining experience. This dinner series happens twice a month during farmers market season, so attend additional dinners to see how chef Bisht utilizes the seasonal ingredients.

Mountain High Cocktail Class – Cognac Edition
- June 26 from 4-5 p.m.
- Go on a guided tasting journey while learning how to craft two cocktails using cognac, accompanied by small bites designed to go with the drinks. Beyond cognac, The Remedy will host more cocktail classes featuring Belvedere Vodka and Volcan Tequila in July and August.

Peaks & Pours
- June 25 from 5:30–8 p.m.
- Executive banquet chef Kerry Linne has designed a seasonal four-course dinner where you will be guided by Brenden Walker, a Level 3 sommelier from Denver who has chosen some wonderful vintage wines from Duckhorn Winery. The Hythe Vail plans to host these dinners monthly.

Rosé Reverie: A Château d’Esclans Pairing Dinner

- Experience an exceptional evening at Stoke & Rye with a curated four-course pairing dinner featuring Château d’Esclans wines. Begin with a welcome glass of Whispering Angel, followed by dishes designed to complement each wine, from fresh cantaloupe with Serrano ham paired with Rock Angel, to brown butter scallops with saffron risotto alongside Château d’Esclans, and pan-seared duck breast with sweet potato hash matched with Les Clans. Earth-to-Table Dinner Series
- Wednesdays, Aug. 6-Oct. 8
- Ritz-Carlton Bachelor Gulch executive chef Jasper Schneider is bringing back the ever-popular Earth-To Table dinner series later this summer. Hosted on the patio of WYLD restaurant (weather permitting), dine on the creative recipes the chef and his staff come up with each week based on Colorado’s bounty. The menu changes to feature the freshest ingredients from local farms. The menu will be released closer to the first event.

Aloha Island Apres: Where Aloha Meets Altitude

- The Tavern on the Square is creating island vibes with this pop-up that features $12 shrimp poke bowls and $15 weekly specials on Aloha Drinks like the Cowboy Mai Tai. Listen to live music by country music duo Tim & Taylor from noon to 3 p.m.
Vino Ventures Hike & Lunch
- Aug. 9, 10 a.m.-1:30 p.m.
- Earn your calories by going on a hike followed by a three-course meal. The hike will be led by Kylie Bearse, Denver Fox31 meteorologist and founder of Approachable Outdoors. Nick Steger, the executive chef at the Arrabelle in Lionshead, will explain each course and Casey Stringer of California’s Stringer Cellars will tell you about the wine pairings.

Tavernetta Vail at Four Seasons Vail

Rylan Bonaccorsi, lead sommelier and chef de cuisine Ethan Diamant, of Tavernetta Vail, are excited to share their love for Italian wine and cuisine in a new monthly dinner series celebrating a different region’s cuisine and a selection of bottles to pair alongside each course.
Tuscany Wine Dinner
- July 17 at 7 p.m.
- This multi-course tasting menu will showcase some of Bonaccorsi’s favorite producers and grape varietals in Tuscany alongside Chef Diamant’s take on the great classics of Tuscan cuisine. From assaggi (small bites) to the dolce (something sweet for dessert) this will be a treat for your taste buds.

- Aug. 21 at 7 p.m.
- Campania’s proximity to the sea, its fertile volcanic soils and abundant sunshine create some amazing wines. Enjoy the different varietals of the region paired with burrata, calamari, spaghetti with zucchini, squash blossom and provolone, braised lamb and affogato for dessert.

The hike will be led by Led by Kylie Bearse, Denver’s Fox31 meteorologist and founder of Approachable Outdoors. Executive chef Stu Turner will explain each course and sommelier and brand director of Fraîche Wine Charles Miller will let you know about each wine.

Beaver Creek’s Alpine Table Series
Red Sky Ranch
- Aug. 22-23
- After a couple of successful events during the past few winter seasons, Beaver Creek is bringing back its popular Alpine Table Series for a special summer edition. The venue will be very unique because it will be hosted on the fourth fairway of the Norman Course at Red Sky Ranch Golf Club. The details are still being discussed, but look for an elevated dining experience with locally inspired food, great views, all on the setting of the golf fairway.
