Vail’s Restaurant Kelly Liken serving prix-fixe menu
VAIL CO, Colorado
VAIL – Restaurant Kelly Liken is offering a new wintertime three-course prix fixe dinner menu for $74 per person. Celebrated for her straight-forward seasonal American cuisine, Liken uses locally-sourced ingredients as often as possible, including Colorado root vegetables, winter spices and Colorado lamb, duck and wild game raised throughout the Rocky Mountains, some of which is exclusively raised for Restaurant Kelly Liken.
Simple ingredients, combination’s that pique the culinary curiosity, and a menu that features as many ingredients that are available in season as possible, best describes Liken’s approach
“I like to fully embrace the seasons with every menu I create,” says Kelly. “It’s not about what I can bring in from some exotic far-flung locale but rather what is in front of me growing right here in Colorado’s very own backyard.”
The three-course prix-fixe menu will consist of a selection of dishes featuring ingredients from Morales Farms, the highest known altitude working farm in the country owned by the Morales family since 1943; Munson Farms, known for its winter squash; and Story Farms. As an addition to the three-course menu, guests may start the meal with an appetizer for the table.
Personalized wine pairings are always available, designed by Liken’s husband and Wine Director Rick Colomitz.
The wine list offers up to 60 wines by-the-glass at anytime, all available by the 3-ounce pour. Customized flights are also available and change daily.
The mixology program and cocktail list gives Liken a chance to showcase her chops in the cocktail kitchen. Stand out seasonal winter libations include the “Alpine Painkiller” with Jagertee, orange juice, Stirrings orange liquor, dash of bitters, splash of soda, grated nutmeg, served on the rocks ($14).
