EAT: The Milk Breakfast in Eagle serves the healthiest meal of the day

For 15 years, Jesus del Toro has been a fixture on the local restaurant scene, opening one after the other from Eagle to Vail: Casa Mexico, Sabor Mazatlán, Del Toro. And while they all represent different aspects of his beloved native Mexico, with his newest, The Milk Breakfast, del Toro celebrates his favorite meal of the day: breakfast. The Eagle eatery offers the best of both American and Mexican classics, with a little del Toro twist. 

“I wanted it to be healthy food, to make you feel good,” he said.

To del Toro, breakfast is an opportunity to spend time with your family and loved ones. And so his menu is set up to do just that. There are breakfast appetizers for the whole table to share — items like miniature pancakes with mixed berry compote or banana halves gilded with yogurt and granola, all designed to get the party started and the taste buds alert without spoiling your appetite.



“Our menu is made with a lot of love,” said Daniela Acero Montana, marketing manager.

It’s also exclamatory — each menu item is punctuated by an exclamation point, driving home the excitement of the first meal of the day. Biscuits and Gravy! Huevos Rancheros! Filet and Eggs! Taco Chile Relleno!

With all of the sauces and salsas made in house and a profusion of freshly squeezed juices, The Milk Breakfast offers nutritious scratch cooking for both breakfast and lunch. The Milk Morning! is their signature plate, featuring avocado toast studded with tomatoes and ricotta cheese, scrambled eggs, smoked salmon and fruit. Benedicts and omelets fall under the Morning Classics heading, while the Mexican Sunrise options delve south of the border: enfrijoladas, chilaquiles, burritos and more.

“Jesus loves what he does,” Montana said. “Sometimes it is hard for him to express himself with words, but he can always express himself with his food.”

The Milk Breakfast takes its name from del Toro’s favorite restaurant from his childhood: La Leche. “When he was a child, he’d go on Sundays with his family,” Montana explained. 

They’ve had fun with the theme, leaning into cow décor which brings a touch of humor to the space. And while breakfast is certainly the main concept — and available all day — traditional lunch offerings can be found, too, starting at 11:30 a.m. Salads, hamburgers and sandwiches round out the lunch options, the most popular being a chipotle chicken sandwich, layered with spinach, tomato, mozzarella and avocado on sourdough bread.

Specialty coffees and a juice bar are worth exploring, and look for espresso martinis and mimosas during brunch.
