Chef Tracy Miller to teach cooking classes in Eagle and Edwards

Tracy Miller teaches cooking classes at Colorado Mountain College and around town.

Tracy Miller cooks every Sunday on TV8’s “Good Morning Vail,” where she encourages using fruits and vegetables in every meal, a style she calls “Colorful Cooking.” She inspires and teaches people how to cook and eat healthy.

“Tracy’s classes are fun and interactive, and the recipes are unique. She always adds great cooking and food tips so I learn something every time,” said Sarah Bean, Colorado Mountain College student.

For a more formal culinary environment, join Miller at Colorado Mountain College in Edwards. The innovative learning kitchen at Battle Mountain High School is where CMC hosts its cooking classes and students don aprons and are encouraged to participate. The CMC schedule this semester is jam packed with regional classes for all abilities and foodies. CMC classes are $55 per person. Here is a list of upcoming classes where menu items include, but are not limited to, fruits and vegetables.

If Italian is your style, then Southern Style Italian is at CMC on Jan. 18 from 4 to 7 p.m. This class focuses on fish and seafood and rich Italian sauces.

Does stuffed French toast or the perfectly cooked egg make your taste buds dance? Breakfast For Dinner will expand beyond your basic bacon and eggs and help you create simple meals that are nutritious, inexpensive and easy to make on a weeknight. That class is slated for Jan. 20 from 5:30 to 8:30 p.m. at CMC.

In February, right when motivation to keep cooking healthy can wane, Miller offers up the classes Curries, Down South on the Skinny and Glamorous Veggies. The Curries class is Feb. 1 and will take a trip to India and Thailand with spicy homemade curries and exotic ingredients. Ever want to have your shrimp and grits a little lighter? Down South on the Skinny is Feb. 13 and Glamorous Veggies is Feb. 24.
