Minturn’s Kirby Cosmo’s dishes superior ‘cue

As one of the valley’s most beloved barbecue joints, Kirby Cosmo’s in Minturn has big flavors and warm vibes all summer long — the restaurant nestled off Main Street is named after a dog, after all, and is often filled with people and their pets pre-and-post a day’s adventure.
With a new and updated bike path through town, and the popular town bike park, along with some of the best day-hikes in the valley, Minturn is a summer haven for outdoor enthusiasts, and some quality barbecue ties a perfect bow on a summer day.
The brisket sandwich is always juicy with the slow and low cooking method. St. Louie Short Ribs are also a popular option. But when it comes to barbecue, we all know the sides are not mere ride-alongs to the tasty meat; they are key. Cole slaw, baked beans and potato salad are, of course, available, but you must try the jalapeño hush puppies and the KC’s Famous Mac & Cheese or fried green tomatoes as well. And Millwood’s Dirty Fries practically has its own fan club: hand-cut french fries topped with pulled pork, KC’s famous mac and cheese sauce, sliced fresh jalapeños and, if you wish, chunks of bacon —over the top? Yes. Do you need it? Also yes.

And whatever you order, be sure to save room for the banana pudding.
In addition to Minturn’s bustling recreation offerings, the town also hosts a concert series on Thursdays during the summer, and Kirby Cosmo’s is the spot for the after-party, with the live music continuing at the longtime Minturn staple. And on Fridays, live music starts around 6 p.m. Owned and operated by Mark Tamberino and his family, Kirby Cosmo’s dishes classic Colorado vibes and quality food — a perfect pairing with a fun day in Minturn this summer.
