EAGLE — As the seasons start to transition into winter, Dusty Boot Roadhouse in Eagle will be undergoing its own transition. On Monday, the doors will reopen to a redesigned restaurant interior and menu.

“We are excited to present an even better experience than before,” said John Shipp, owner of Dusty Boot Roadhouse and Roadhouse Hospitality Group. “Every modification we made was to tailor the restaurant to the Eagle community that has been so welcoming.”

Opened in 2008 as The Dusty Boot, the restaurant will now be known as Dusty Boot Roadhouse. The furniture, as well as the look and feel of the restaurant, has been updated to match a new, modern design. The new menu will feature new burgers, appetizers, entrées and drinks that have become popular at other Roadhouse Hospitality Group Restaurants. Many of the local restaurant’s popular entrees and drinks and its long-established, friendly vibe will remain.

Now part of the Roadhouse Hospitality Group, the Dusty Boot Roadhouse joins a collective of 14 restaurants throughout the Front Range and in several mountain communities. The Colorado-born and -bred brand is the creation of five Shipp siblings who stay true to their Colorado roots and aim to deliver exceptional food with unbeatable service at a great price.

The restaurant group has also created some traditions that will make their way to the Eagle restaurant, such as the branded wooden nickels that can be traded in for a beer or root beer float. Dusty Boot Roadhouse is open every day starting Monday for lunch and dinner and is located at 1099 Capitol St. in Eagle.

“Change is always exciting, especially in a community that means so much to Roadhouse Hospitality Group,” Shipp said.
