Mustang Bar & Grill is out, Matthews is in
Theres a new flavor coming to Edwards this November. Mustang Bar & Grill will be replaced by Matthews, a casual fine-dining establishment where gourmet steaks and an international wine list will be offered.Elena and Matt Jones purchased the space at the end of September and have been overseeing renovations and preparing the menu for their soft opening Nov. 9 and the grand opening Nov. 23.The overhaul will include a new stone fireplace, lighting and artwork. The wooden booths that used to line the walls of Mustang will be removed in favor of more tables for an elegant appearance. The couple hopes to use the two outside wooden decks in the summertime as well, which would expand seating by almost another 80 people, bringing the total to about 200 seats.Everything is going to be different, said Elena Jones, one half of the husband-and-wife duo running Matthews. Both the ambiance and cuisine will be new, thanks to the vision of chef and owner Matt Jones.The creative American fare that will be offered to diners will focus on organic vegetables and hormone-free meats, Elena said. Matt Jones has been in the restaurant business since the mid-90s, and his resume includes Lancelot Restaurant and Billys Island Grill. Matt is shooting for an award-winning wine list and a really nice presentation with high-quality ingredients, he said.
A full menu including desserts and cocktails will be in place for opening day Nov. 9.One signature dish on the menu is jumbo sea scallops wrapped in apple-wood-smoked bacon with a caramelized leek sauce served with black rice and Southwest vegetables.Admittedly, Matts tastes lean toward California-style dishes, but his creativity in the kitchen keeps the menu from tipping too far to one side.I like big flavors, something that is sweet and spicy, he said.He also is tossing around the possibility of a gluten-free menu to complement the vegetarian items that will be available.Although the couple has worked together before in a similar setting, this is an opportunity that neither one takes for granted. This is our gig. This is our dream, Elena said.When Matthews opens, only dinner will be available. Starting in early December, lunch will be added. Matthews also will cater and host special events, as well as offer free wireless Internet to diners.
