Matt Vawter of Rootstalk Breckenridge joins the Allie’s Cabin culinary team for two extraordinary dinners

Spectacular views, delicious dishes paired with fine wines and a James Beard award-winning chef all await at The Alpine Table: A Cabin Chef Series this weekend at Beaver Creek. Matt Vawter of Rootstalk Breckenridge will join the talented team at Allie’s Cabin led by executive chef Jillian Shaw for two different evenings of dining on the slopes.

The Alpine Table: A Cabin Chef Series made a mark on the culinary map last year when executive chef Mackenzie Nicholson of Beano’s Cabin hosted Blackbelly Market & Restaurant guest chef and winner of Bravo’s “Top Chef” Hosea Rosenberg in January. In February, executive chef Duncan Holmes of Michelin-starred Beckon in Denver joined Zach’s Cabin’s executive chef Jonathan Alonso and Allie’s Cabin welcomed executive chef Ethan Diamant of the Michelin-recognized Tavernetta Vail. Those collaborations gave guests a way to experience a unique and curated dining experience in an amazing cabin setting on the slopes of Beaver Creek.

On Friday and Saturday, a snowcat-driven open-air sleigh will bring guests up to Allie’s Cabin where they will be greeted by Lalo Tequila cocktails for a happy hour complete with an ice bar on the Allie’s Cabin deck. Then, guests will be invited to a community-style dining experience inside the cabin.



“Throughout the night, guests will move through a series of intentional moments and activations that complement the multi-course menu. It’s designed to feel social, immersive and relaxed while still being elevated,” said Eric Dunn, communications manager for Beaver Creek.

Matt Vawter, 2024 James Beard Award winner, is coming over from neighboring Summit County. Vawter developed a passion for cooking in high school there and enrolled in the Colorado Mountain College Culinary Apprenticeship Program in Keystone. He honed his chops in Denver for over a dozen years and spent seven years at acclaimed Fruition and Mercantile Dining & Provision under Chef Alex Seidel.

Rootstalk Breckenridge has been open since 2020 and is an approachable, technique-focused restaurant designed to feel like coming home. In 2022, Vawter and his partners opened Radicato, celebrating Italian heritage while maintaining that same commitment to intentionality and excellence.

“Working with Matt has been a very collaborative process. His ingredient-driven approach aligns well with the vision of The Alpine Table,” Dunn said. Born and raised in New Hampshire, Chef Jillian has helped open and run top farm-to-table restaurants alongside James Beard award winning chefs.

“Planning for this event has been in motion for several months, with ongoing conversations around seasonality, sourcing and how to translate his style into the Allie’s Cabin experience. It’s been a thoughtful back-and-forth between Matt, Chef Jillian and our culinary team,” Dunn said.

Last winter Allie’s Cabin welcomed executive chef Ethan Diamant of the Michelin-recognized Tavernetta Vail to The Alpine Table event.
