Red Sky Ranch’s Silver Sage restaurant now open to public

WOLCOTT – Diners at Red Sky Golf Club’s Silver Sage will find a menu rich with fresh produce and seasonal Colorado ingredients. Silver Sage welcomes the public for dinner starting at 6 p.m. from Friday through Monday evenings throughout the summer.Located in Red Sky’s Member Clubhouse, Silver Sage offers a casual yet elegant dining experience. Chef Owen Moore’s new menu features first courses including seared diver scallops with heirloom tomato and salsa verde, chopped maine lobster salad with avocado and lobster vinaigrette, cantaloupe and champagne gazpacho with jamon serrano and mint and more. Entrees include split rack of colorado lamb with mint julep sauce, burgundy braised shortribs with sunchoke puree and roasted root vegatables, Niman ranch farms pork chop with apples and chantrelle flan, USDA prime tenderloin Dianne and truffle chips, seared Alaskan halibut with brown butter and summer vegetable saute and more.A comprehensive wine list complements the menu.The restaurant features Western architecture with floor to ceiling panoramic windows and a wraparound deck, each overlooking the ninth and 18th holes of the Colorado’s only Greg Norman Course with views of Castle Peak. Diners can experience the sunsets for which Red Sky Golf Club takes its name.Silver Sage will be closed July 21-22 for a special event. The restaurant is open for lunch daily to Red Sky Golf Club members only, but daytime visitors to Red Sky can eat lunch at Summer Thyme Restaurant at the Guest Clubhouse.
