Whether it’s a work day or a good ol’ fashioned Colorado day filled with adventure — or both in one — The Boardroom Market & Deli in Edwards is on a mission to provide a delicious meal or snack to help energize you throughout yours. The Boardroom might be located in a small space tucked conveniently in The Riverwalk of Edwards, but the more-than-a-sandwich-shop is serving up some amazing culinary creations all winter long.

Perfect to grab on the way to the mountain and enjoy on a chairlift or while catching up with old friends in the welcoming Boardroom itself, the legendary sandwiches are served hot and cold — both for breakfast and lunch. Open from 7:30 a.m. to 4 p.m. each day, The Boardroom is there for you before or after the day’s fun.

“It’s just a good little spot where people like to come hang out — and eat good food,” said Brantley Rowell, who’s been working at The Boardroom since graduating from Battle Mountain High School. “A lot of people in The Riverwalk like to come for lunch because it’s right here, and from as far as Eagle to Vail — it’s pretty centrally located.”

Since opening in 2019 – months before the global pandemic — owner Brad Trumpower and his team have gained a reputation for consistent, quick and fairly priced breakfast and lunch meals, with a friendly vibe as well.

Some of the more popular sandwiches include the Riva Ridge Italian — an ode in the name to the 10th Mountain Division soldiers that trained locally and served in World War II. The Riva Ridge Italian comes with capicola, roasted ham, genoa salami, provolone and all the classic fixings, served on French bread.

The majority of the menu, in fact, pays homage to the ski towns The Boardroom serves — try the Blue Sky Reuben (bonus if you eat it in Blue Sky Basin on Vail Mountain); or the Pepi’s Face Meatball (we do not recommend eating this on the black diamond Pepi’s Face ski trail in Vail); or show your loyalty to Beaver Creek with the Bald Spot Prosciutto or Gold Dust Cuban.

With a background in the food industry, Trumpower knows what people want. Making as much as they can in-house, The Boardroom keeps a focus on quality ingredients made fresh. Gluten-free bread is an option, and all sandwiches come with a pickle and can be substituted into a wrap. 

The Boardroom is also available for catering services, offering both platters and individual sandwiches.
