The Remedy: Vail’s cocktail-forward dining experience

A hotel lobby bar might not seem like a dinner destination. But it should be. Nestled inside the Four Seasons Resort and Residences Vail, Remedy is like the classy cousin of après-ski: energetic and posh, but not pretentious.

The beauty of Remedy is the variety — not just in the flavors, but in the seating, mood and experience. Cozy up on a couch near the fireplace for a light meal, belly up to the lively U-shaped bar for a cocktail or settle into a more traditional dining space with oversized plush chairs. Each area offers intimate — and different — dining experiences with a unique view of Vail Mountain through floor-to-ceiling windows.

It all begins behind the bar. Instead of one mixologist dictating the seasonal menu, the entire team contributes to it. Each drink is shaped by the seasons, the mountains outside and the bartenders who craft them.



“There’s a lot of work that goes into our beverage menu,” said Nicole Kaiser, restaurant manager at Remedy. “Everyone on our team brings several ideas and then we work together to develop the final drink.”

The result is a unique curation of innovative cocktails.

The Fireside Mule is a winter-leaning spin on the classic Moscow Mule that tastes like fireside s’mores. Amaretto and toasted marshmallow syrup bring sweetness and warmth before the copper mug is crowned with a golden brown roasted marshmallow.

The showpiece of the beverage menu? The Après-vous. Parmesan is infused into Belvedere 10 Vodka for five days, then strained three times until the texture is impossibly smooth and savory. A rosemary-thyme syrup adds herbal depth, then a caviar-stuffed bellini is topped for an indulgent drink.

While the cocktails shine, so does the kitchen. 

The crab cake is a standout staple. A thick, pan-seared wild-caught crab patty rests on scallop mousse and is paired with tiny lemon pearls that burst with bright acidity. For something bolder, the house-smoked chicken tikka brings the heat. The chicken marinates overnight, developing a deep, layered spice that’s tamed by the mint chutney.

If you’re craving something casual, the Remedy Burger delivers. The 7X Ranch wagyu, it’s stacked high with bacon jam, chipotle aioli and cheddar with a side of crispy truffle fries. On the lighter side, black sea bass is delicately steamed and dressed with a herb butter. For a hearty but lean cut of meat, try the butter-and-thyme-basted bison striploin, paired with a sweet Palisade peach chutney and savory bordelaise sauce.

You don’t have to dine at Remedy to experience their renowned hot chocolate — but you should. 

“The Famous Haute Chocolate is our claim to fame,” Kaiser said.

Every element is made in-house, from the chocolate tuile to the marshmallow and chantilly crème for a decadent drinking chocolate. Served tableside, it feels like a production. Even adults watch wide-eyed.

“We want to elevate our offerings and create an experience for the guest, so it’s not just a place to dine. There’s a lot of thought behind our food and beverage offerings so that you get more than just a plate of great food,” said Kaiser.

Their dessert menu follows creative suit. The spiced peanut butter mousse is a grown-up reinterpretation of the PB&J with creamy peanut butter mousse layered over shortbread and topped with Rocky Mountain huckleberries. A warm toffee sauce is poured over it, melting through a delicate raspberry chocolate layer and pooling in the middle like liquid nostalgia. Remedy is a culinary destination that delivers inventive cocktails, thoughtful dishes and one iconic hot chocolate. The next time you’re in Vail, don’t just breeze past the lobby; make Remedy the reason you came.
