Chef buys Gore Range Brewery

EDWARDS – Chef Pascal Coudouy, a long-time local and most recently the executive chef of Park Hyatt Beaver Creek’s 8100 Mountainside Bar and Grill, has bought the Gore Range Brewery in Edwards.

“I am thrilled to step into a magnificent local restaurant that has built a solid reputation for good food, beer and wine and an atmosphere that caters to Vail and Edwards residents,” said Coudouy.

Coudouy said it is too soon to tell what changes are in store. “Our first priority is to get the deck ready for summer, plant our herb garden and remain true to what patrons love: fresh, local, organic whenever possible, great ingredients. Time will let us discern the changes in the months to come.”

European-born and trained, Coudouy became the executive chef of Park Hyatt Beaver Creek in 2000. In 2008, he, along with then general manager Scott Mason, oversaw the renovation of 8100 Mountainside Bar and Grill. In November 2009, 8100 was honored in Esquire magazine’s Best New Restaurant issue as “one of the top 15 not to miss.”

The Gore Range Brewery is open for lunch and dinner seven days a week and features a casual atmosphere, food, beer, wine and a full bar. For more information call 970-926-2739.
